Since the iPad has a 1Ghz processor, I am sure it could handle some of the older games we enjoyed in the early 2000s.

Myself:

-Star Wars Galactic Battlegrounds
-Rise of Nations
-Escape Velocity
 
Actually I'd like to see some of the games from the early to mid 90's for nostalgic value. "Pathways into Darkness" was a blast. I will admit to a Kings Quest here and there too, haha :)

iPad could definitely handle these, but it'd have to be a port to Objective-C from whatever it was back in the day.

Basically what bothers me is that developers create games for iPad like if they were Demos, they are like lite versions of the PC/Mac games

For example:
Command & Conquer. This game is great I must say, but once you play the Mac version and you get back to your iPad you feel like playing on a GameBoy Color, less units, really small maps and less campaign scenarios.
 
Toucharcade covered a dev who was making a Lemmings port a while back until the license holder sent a cease and desist letter. I would have liked to have seen that on the app store.
 
These aren't Mac games, but I'd love to see some old school survival horror games like Silent Hill 1 or Resident Evil 2 ported over to the iPad. The iPad should be more than able to handle those older graphics...I would think?
 
Rise of Nations would be awesome. For the life of me, I can't figure out why no one has made a really good RTS for the iPad yet. C&C is the only one I know of and it looks kind of basic/boring.
 
I wouldn't mind a version of Dune II or Dune 2000, although I don't think they were ever released on the Mac in the first place.
 
elder scrolls / oblivion / morrowind etc. I would love to see this type of game on the iPad. I think it's definitely possible. I know some of those aren't on the Mac, but still.

With the release of Epic Citadel, it really got me thinking about those classic games. I would really love to see them expand on the Epic Citadel and unreal engine and turn it into a massive awesome game.
