One Note is being constantly updated but they are yet to get their inking right I feel. Notes on Notability look so much nicer. But more importantly, way too often, One Note tells me it cannot sync anymore.

Noteshelf and Goodnotes are the best handwriting apps for me. But Notability has improved in their latest versions and is very close now.
Noteability can do almost everything goodnotes can while looking good. I don't like how aged goodnotes looks.

Ha. I'm just the opposite. I much prefer the UI in Goodnotes to Notability.
The folks at goodnotes have a beta sign up website for version 5. Don't think it is live yet. But a screenshot of the new version on this website suggests the UI is gravitating to using more modern design elements like Notability does.
To me Notabilty is perfect if it gets OCR like Goodnotes does. In fact it should do even better and allow search across all notebooks if required.

GoodNotes is the best when it comes to projecting. It is able to AirPlay only the page you are writing on. So I am able to have other apps open (using multitasking) while only showing the page of GoodNotes to students. This also allows me to fill an entire TV screen instead of being restricted to the iPad’s aspect ratio. That is what puts it over the top for me personally.
GoodNotes recently fixed the Cloud sync, and I'm thrilled to use it again at full power on all my devices.
This sync problem made me seriously consider a switch to Notability.

To my personal taste, the UI is more refined than the one from Notability. Although I like the home screen / file manager in Notability a wee better than the bookshelf in GoodNotes.
It's hard to explain, but the writing scale in Notability feels a bit unnatural to me. In GoodNotes I have a 1:1 experience, in Notability I don't.

And finally, the customization of templates in GoodNotes. I've made a ton (see my YouTube channel), and I like how you can use several templates in one notebook.

I know exactly what you mean! I think the inking in Notability is excellent, but I always go back to Goodnotes because it feels more natural. I've always thought that it was the line spacing options that were available - none of them feel quite right to me in Notability.
For me, Noteshelf has the right linespecing and I find it has the most natural handwriting. But of course it all boils down to personal preferences 🙂
