Video

I'm going to make a video where you can get more than 8 pages in safari without jailbreak! :)

I'm more disappointed by this limitation on the iPad. I think its 9 tabs there but that's not much of a difference from 8. I can certainly see why this would be a hindrance to some on iPhone or iPad.

Try iCab Mobile. I'm pretty sure you can open as many tabs as RAM will allow.

I use a buch of tabs on my Mac, but not intentionally, I start a new window in a second workspace and next thing you know I have 50 tabs open, 90% of which I don't need. I've never really used more than 3 tabs on my iPhone though, and maybe 4 or 5 on my iPad as I am more single-task oriented on those devices.

I suspect the limit is 8 because the designers feel navigating between a larger number of open pages would be too tedious, but I'm not sure I agree with that.

I don't think it's an unreasonable thing to want, although I don't want it myself. Seems like it would be a trivial upgrade to add a setting for "maximum number of open pages" to Safari. Have the default at 8 and the maximum at, say, 32.

And you are wrong. The limitation is caused by iPhone specs. You know, those that don't matter... until they do. You can't expect that browser will be able to hanle many tabs on a computer with just 512MB RAM. If you want more tabs you need to buy a modern smart phone. Here is a hint - Samsung Galaxy Nexus, 1GB RAM, 16 tabs limit in stock web browser.

not sure why you would want this. i rarely have more then 5 open in my actual macpro... only time its more then that is if its porn. so stop looking at porn on your phone :p

Of course its been improved, I even said that in my OP, but why settle for just that? Apple should always be pushing to make the best experience possible.

You just answered your own concern. Apple is pushing to make the best possible experience for the largest number of its customers. Apple, nor any other company, cannot meet the individual needs of all customers. I would be willing to bet that having more than 8 safari pages open at once on a 3.5 inch smartphone screen is not something a majority of people need.
