f.lux, SwipeSelection and BatteryDoctorPro (auto 3G (de)activation and auto kill apps, amongst a whole bunch of other things) are the three JB-apps/tweaks that I would pay for to get back.
 
I used to JB for two reasons:

1. iBlacklist
2. 3G Unrestrictor

With 7.0, it's now possible to block any phone number so that rules out 1. I can deal with 2 without a JB ever.

The apple call blocking fails to block voicemails from spammers. iblacklist is still better than apple's implementation of blocking.

iOS7 is pure awesomeness and for me personally - I never need to JB again and have to deal with a slow, sluggish iPhone that eventually would need a "fresh" install after a few months.

The ONLY tweak I'm going to miss is iBlacklist (for restricted/private #s) but it's not a necessity.

Been jailbreaking since 2007, never ever had a sluggish iphone nor one that needed a "fresh" install after a few months because of a jailbreak. iOS7 is the most hideous verison of iOS I've ever seen. Can't wait for a jailbreak and some themes that don't look like they belong on a 14 year old girl's phone.
 
But those would only work for the 5S, so they would probably try to keep any 64 bit bugs in stock and use only 32 bit bugs to jailbreak everything and then later use them.

Can't always save because it will eventually end up patched or leaked eventually.
