I agree with you, but it's not really THAT ugly. I started with Astronomy because I'm a space nut. It's pretty cool, but limited functionality and probably not useful at 1AU. I switched to chronograph and loved the design of it. But the stopwatch access was really annoying and wasted space for me. When I figured out about the complications I could add to modular, I switched to it. I now have my work schedule programmed in so I can see what I have to do that day. Then today I have a social event, so I see that every time.
I think it's basically information vs. "ooh, pretty." It depends on what you value most. I really hope some of the customization is opened more soon, especially the date display format.
I too like and voted for the modular. I wish, however, that it was more customizable. That is, I want to be able to switch where the time and the date are, I want the time to show up in the center and the date in the upper right corner, but that doesn't seem to be a possibility.
Nothing? I just figured it'd be cool to know what people like the best. Which apparently you did too, because you read the thread.
Oops, I'm sorry. I felt like I was missing a face, it's too bad I can't add anymore choices.
My favorite is solar just love the way it looks. I do switch to modular or chronograph with a blue dial sometimes if I want more info but solar seems to be my favorite so far.
My favourite is the Chronograph but I have one major gripe with it. I'm quite regularly accidentally activating the stopwatch. If only there was a way to replace the stopwatch with a different complication. So now, I'm using Utility instead as the next best alternative to the Chronography.
I love the simple face because you can dress it up and down. I too would love new watch faces. I was extremely underwhelmed by the new faces Apple released. I don't want pictures or buildings as a watch face, I want a real watch face. I would love some more elegant designs and maybe some that fill the whole face up.
It's pretty bizarre that one of the most requested features is probably the easiest one for them to add - add more faces with more customizability/complications.

I know.... This can't be hard. But it wouldn't be apple if they just let us do whatever we wanted. I guess they feel they know best. I generally agree with most things they do, but you can't put "most personal device ever" and then tell us you can only have these 10 faces. I know can change them but they are still the same faces. I want more options.
I use 2 watch faces:
During the work week I rely on the modular watch face for 3 time zones (CST,EST,GMT), Calendar and Date. (Tools I use at work)
On weekends I use the custom watch face (WatchOS 2.0 feature) below because I don't want to think about work and just need to see the time and date.
