@Krafty - no, the folders still make the background turn black. I have no idea what causes this nor how to fix it, so it's up to someone else to tackle this issue.
@iPhone4UK - I won't be able to tonight as I'm about to leave for work for the rest of the day. But tomorrow during the day I will have time to post what I have so far. I figure I'll make a new thread and label it as a WIP theme so other people can contribute.

I just checked the no undocked icon labels and no docked icon labels in winterboard. I've heard of people needing to install the No undocked icon labels 4.0 from cydia to get it to work properly with ios4/iphone4, but I've had no need.

I have done that but if install and select it via winterboard... my phone goes into safemode

You might have to read the whole thread, the creator is French and therefore made it in 24HR format, so we had to modify it. I made aware some of the problems in which I think he bailed.
Some things need to be redone and some things are unfinished, but I think getting the weather/time widget working was the biggest hurdle, and I have the contributors in this thread to thank. Good work!
Of course, as soon as this is finished and I'm satisfied with it, I'll post everything you need to get your phone looking like this, for anyone who wants it.
in for this! I hope its possible to do it on a iphone 3gs.
