So on Apple devices even explicit privacy features might give only a false sense of security. Apple is getting looser and looser on privacy and security, and continuing to add self-sabotaging features like CSAM.

Wouldn't be surprised to hear one of these days that Apple has been selling private data of a billion users, only that they have a different interpretation of what is "selling" or "data" or "private" or "user".
You do realize that CSAM is not new and not unique to Apple. Other companies have had CSAM implemented in their products and services for quite some time. They've just not ben forthcoming about it.

You do realize that just about every entity that you deal has been selling your data without your consent. If you have an GMail account or use Google Chrome as your browser or use Google as your search engine, your "private data" has been harvested and sold. Just yesterday it was reported that Verizon Wireless has been collecting data of their subscribers unbeknownst to them. The list goes on and on and on. Do you express that much outrage to those companies and entities or just Apple?
 
That only protects your IP. You need to use something like TAILS booted from thumbdrive if you want to stop the tracking entirely.
Your statement is not 100% true. VPN adds encryption. Regarding tracking, it depends on the VPN you are using. I use ProtonVPN which includes additional features such as a secure core option, protection blocker for trackers and malware etc etc. You can also take additional steps like using Brave Browser, using an email provider that blocks trackers, adding privacy extensions to your browser. etc. etc. etc..

You suggested using TAILS which routes the TOR network. This can be extremely slowwwwwwwww. If you use TAILS but continue your normal practices such as logging into a GMail account, Google knows it's you.

I admit, I've had both apps on my phone in the past.
Snapchat...eh. Brother, sis in law, nephews had it...so I signed up but barely used.
Facebook, I just wanted that off my phone, be done with them...period!

But getting around the "dont track me?" Nope..not shocked.

A friend persuaded us to join FB in 2009, to keep track of group meetings. Shortly thereafter I read FB’s policies, discovered how completely they steal everything about you, and canceled my account. Then I deleted it completely…more than 11 years ago.

Amazing now just how many stories there are about this evil corporation, its spawn and other companies doing the same. Trust me, you can live happily without any of these “services.” So glad I got out a long time ago.

Perhaps Facebook pledged to spend $275 billion that would help Apple in the long run….
 
Doesn't this sort of prove that companies like Facebook don't care about privacy? If you even give them a good-faith benefit of a doubt that they do care, but are trying to balance giving users control with also being a profitable business, then why not follow requests not to track? Why do the same behavior users explicitly expect you not to do?

I say this because I saw a TV add for Meta (Facebook) discussing privacy, where they seem to be urging congress to pass some sort of privacy standards that can be used across companies, across the board. Black and white laws, so to speak. Well, what good will they be if they'll just find loopholes to continue doing the same thing?

It’s crap like this that’s stopped me from using apps. I’m more and more just browsing 100% in incognito mode so no cookies are ever saved. I’ve also stopped using FB and insta altogether but that’s a different topic.
I use NordVPN, AdGuard and Duck Duck Goose for web Searches to stay anonymous with no ads on the web. No Facebook for me. Don’t care for their business model.

That’s why I deleted the Instagram app and only use the web version with a Home Screen favorite. Perks? No ads and no stupid shopping icon! Thanks to my Adblocker. You can barely tell it isn’t the App either. The only downside is the limited photo upload functionalities for stories
Whoa, just tried this. I had no idea the mobile web version was so good. And the lack of ads is a serious plus.

I still have an account with a locked down profile that I never log in to. My SO still uses it, so if something family wise comes up, I still see/hear about it.

But I don't feel a desire to log on to it again.

I deleted Insta the day FB bought it.

I deleted my rarely used locked down FB account maybe 5 years ago, and family followed suit.

I had SC on my phone but haven’t used it in years, so it’s gone too.

One other thing I recommend is to go through all your accounts and replace the common email addresses with a unique 1/site address via the new iCloud hide my email generated email addresses.

Took me a couple months but I replaced nearly 500 and was able to delete several email addresses (some of which got significant spam because of past breaches.)

Removed all Google anything from my devices in 2011 (you should too).
Dumped FB in 2015 (and only used it a handful of times before then).
I know that when I’m online, or if I even have my iPhone on me, my location, preferences, history, interests, behaviors, thoughts (ha), etc. are all being monitored, logged, bought and sold. That said, there are things I can do to mitigate this, and I am actively doing such. We don’t have to be the product.
