I think you need to go back and hear what Schiller had to say about matte options on classic MacBook Pros. All they literally do is not include the glass cover and add a support frame around the display.

Provide a link to said keynote. Even so, if that is what was stated it is wrong anyhow.

The fact of the matter is:

Anti-glare displays have a coating put on them to make them anti-glare/reflective.

Maybe you will trust Popular Mechanics:

As mentioned before the coating can be removed. Physical evidence of said coating:

This is how it has always been and is well known by those who are up on display technology.

Well, show me where or evidence that they spray a chemical on te display to reduce glare and I'll yield.

You can tell just by looking at the screens. All AG displays have an antiglare film placed over the LCD. That's why you get sparkle and grain effects in most cases. It's not a spray - but just an actual film that diffuses light.

If one were to disassemble the MBP screen and look at it, it would still be glossy. Perhaps not as glossy as the glass cover, but still definitely very glossy.

see here for proof: http://www.instructables.com/id/How-to-Replace-the-Macbook-Unibody-Glass-LCD/step3/null/

The air never had a cover like the MacBook or MacBook Pro. Notice I didn't include the Air in that description. Just the MacBook Pro line.

Yeah, that's all they did. Matte was just a "no glass cover" on the display.
I'm not sure where your getting your information from but your wrong. I've had both and there's a difference between the Airs and high res antiglare Pros. The Air is essentially the regular pro screen without the extra glass, hence why it has somewhat reduced glare ablility but not as good as the antiglare pros. The high res antiglare on my 15 not only doesn't have the extra glass but has the matte coating Apply applies for that option. You don't even have to believe what were saying, just look at the two screens for yourself, completely different.
