My iPhone 12 is clearly my best phone ever, but clearly the zoom is one area where they have to catch up.
10X will be OK for most people, but I've seen competitors do better.

In theory, couldn't they take say, a medium format (or just a full frame 35mm) sensor, and shrink down / scale the individual "pixels"/"grain"? Or are we already at smallest size with those?Pretty amazing stuff. There *still* isn't any true substitute for sensor size (ultimately you have to have the light, so at least in theory, a purpose-built camera will always be potentially better), but it's crazy that the cameras in our phones are now so good that they are suited to task for all but the most demanding of purposes. A good optical zoom will fill in one big remaining gap.
People have real cameras. It's called their phone. You mean "dedicated camera." Dedicated cameras are only used by 1% of the population now and many of them use a phone as well.If you really enjoy nature photography then spend the money on a real camera if you possibly can. These phone cameras are absolutely fantastic - *for what they are* - but they really are no true substitute for a good DSLR, and prices on those aren't bad at all anymore.
For one thing, a smaller number of 'good pixels' is better than a larger number of 'crappy pixels' by a long shot. And that's just one advantage. Phones have to do a LOT of pixel-massaging software trickery to get the results they get, so while they are great for a lot of things, if you want full control that may be a reason for getting a real camera. Here are a few shots from my truly ancient Minolta 5.1MP DSLR (and it wasn't even an especially high-end; no full-size sensor or even interchangeable lenses, but it did produce nice results):
