I'm going to try 5.0.2 (posting using it now actually), but unless the memory leak issues are solved... It very well may be the extensions. However after a fairly short period, Safari will balloon up to 300, 400, or even 500 MB of real memory used.
What's funny is I'd switched to Safari for a while because Firefox has its own memory leaks - but those are like amateur hour compared to Safari's. However Safari continues to be responsive even when it's tying up all that RAM, unlike Firefox.
And before someone mentions Chrome - it has its own growing pains that need to be solved before I'll try it again. I've submitted some bug reports, but the attitudes of certain developers brings back some bad memories from my Linux days. Talk about antisocial basement dwellers!
Follow-up: I've only visited two sites (including MacRumors), and it's already up to 196MB of RAM (launched using 98).
Then what? Immediately restart in normal mode?
With it installed youtube still plays poorly.

Safari 5.0.2 is still unusable for me, I guess I'll have to keep using Chrome until Apple finally gets around to fixing this issue.

I too am sticking with Firefox. The problem with Safari on my Mac is that it won't let me scroll over any Flash element. It's really annoying on a site like MacRumors with embedded videos. Firefox has no problem with that, so it has to be a Safari glitch.
Change "My Processes" to "All Processes" then post another screenshot. You have any non-extensions plug-ins installed on Safari(such as Saft) / have you ever used a Safari plug-in and never removed it completely? Have you tried uninstall Flash completely, re-installing it, then repairing disk permissions in Disk Utility?
I had the adblock extension installed. I unchecked the block ads on youtube button, so I'll see if that helps.
If it doesn't help i will uninstall and reinstall flash like you suggest.

You really should've mentioned that before you were using a plug-in based adblocker. All plug-in based Safari adblock slow it down considerably. If you want to use adblock on Safari I suggest GlimmerBlocker.
I thought I had turned it off. I double checked and it was on. Adblocker actually speeds up all of my other sites without those stupid flash ads.
If you want to block flash related content then use the aforementioned ClickToFlash. If you want to block just ads then use the aforementioned GlimmerBlocker.
Glimmerblocker doesn't block flash ads?
