Should I sell my iPhone 6 Plus?

I'm not on about display resolution etc. You look at the description of most apps and that's what you see. Unless that's changed extremely recently. The apps certainly do nothing more fancy though so I can't see how they'd suddenly be optimised to take full advantage of the hardware. I'll have to take a look.

OK, you're right. After looking most of my apps are 6 and 6 plus now too. They must've changed within the past month or two. I hereby stand corrected.

The 5s is still an amazingly capable phone and I'd recommend selling the Plus. As has been mentioned you're going to get more money for it now before the market becomes (more) saturated with people rushing to offload after the announcement of the next generation.

With everything I've read about stuttering/lag issues in the 6+ due to up scaling and lack of sufficient RAM, I think you're on the right track. If they don't end up bumping it to 2G this year a lot of people are going to be upset but you should be fine since you're getting the 4.7.
