There are loads of shows I liked that finished but I don't think I'd want any to come back. The only show to really do that (recently) that I can think of is Shooting Stars. I'm a firm believer of shows having their day.

Wouldn't mind a new series of I'm Alan Partridge. Coogan and Iannucci could probably pull off a new series and keep it as good as the originals.
 
Millionaire, with Regis. He was a very good gameshow host.

New Amsterdam - because it was well done, smart and had a cool history slant. That show was way underrated.

While I liked Monk (and while, also, it hasn't technically ended yet) I thought that in the last couple years the plots were getting way too stretched out and unrealistic. Meh, it was still fun to watch tho

roseanne, but only if they promise to erase season 8 and 9 and go from there.

I'll second Animaniacs! Best cartoon ever!
Firefly and Who's Line is it Anyway? are two shows I miss.
Wildside was a show that was canceled way before its time.
 
The Roughnecks loved that as a kid, and they never finished up the series.
