If you go to Settings on that iPad and choose the APP, one of the options is “Connect to this iPad”. By default it is “automatic” but you could switch it to “when last connected”.

Then you will need to explicitly select the APP from your iPad to connect and they will stay connected but will not automatically connect when connected to other devices.

The next challenge is how I get it to stop displaying that mute/unmute instruction window on my phone which I have dismissed many many times.

What I want is the ability to never connect to a specific device. Mine keep connecting to my iPad despite it BT streaming to a speaker.
You could have googled a solution to this rather than living with the annoyance. Glad its sorted for you now.

Maybe they should also focus on improving mic quality. Voice messages or calls sometimes sound quite bad and silent.
Make sure your mics are free from any dirt or grim. Give them a clean and try again. Mic quality should be good To excellent.

Well, how about fixing the myriad of issues first before introducing more features that will be at best "half baked" at launch.

For example, fix the BT distance. I put my phone in my bag, and connection breaks. Or what about making the supposed physical controls on my USB-C AP Pro actually work. Voice control without either Siri or the web - you know like we have had on BT since 2004. Or at least reasonable audio quality, more codecs. I could continue, but I know Apple won't listen.
You got one of those RF shield bags? Lolz. I’ve never had BT connection break with the phone in my bag and I’ve got an iPhone 12.

If the touch gestures on your AP Pro don’t work, take it back to Apple for a replacement.

I don’t quite get the complaint around sound quality over Bluetooth. If your ears are sharp enough to tell the difference you need to go wired.
 
Head gestures are not equal in all countries. In Bulgaria and India one das shake head to say yes. I guess for these cultures this feature will be confusing without a config option.
 
I hope lower latency also comes to homepods so we would be able to use homepods as a speaker for mac without delay.

Have you actually used them while riding a bike? In my experience callers on the other end say they can’t hear me, nearly 100% of the times I try it.
 
Head gestures are not equal in all countries. In Bulgaria and India one das shake head to say yes. I guess for these cultures this feature will be confusing without a config option.
The Indian head shake for ‘yes’, is not the same as the the common shake for ‘no’. It is on a different axis of rotation. They could train it to look for that motion.

will we get a working ANC ever again?
I see that a lot of people complain about bad ANC and I have the same annoying problems. Still there are a few saying that they cancel noise well. Not sure what to think. Maybe the ANC degrades after a couple of years? I tried cleaning the earbuds really well but nothing changed. I may be ordering a new pair and send them right back just to check out if the ANC works on brand new pairs. If that is the case AirPods Pro are really just disposable headphones that lose the ANC capabilities even before the tiny batteries fail.

Thanks. I saw it but my issue is with my Mac, which doesn't seem to have that option. (Unless I missed it in Settings). All I can do is hit "Disconnect".
Click on the (i) in Bluetooth settings.

Well I've had multiple AirPods now, also friends of mine and all sound terrible after a while. All clean etc.
 
There seems to be some variability in that. Some people, like you, do report call quality problems, but for most of us, the mic and call audio are excellent. Not sure why our experiences are not the same.
Wish I could say the same. But it's not just me. also AirPods of friends. Usually we have to take off AirPods to understand each other, as the mics are so bad.
 
About time for head gestures. Better than the hard to press stem. Apple should have tactile controls like Sony and others instead of a press that requires two fingers.
Also nice to have noise canceling and so on but in my electric scooter it's impossible to ride and listen to music when you are going fast and facing forward... The wind noise is unbearable. The only way is to tilt your head to the left or right so the wind doesn't hit the AirPods full on.
I also have Sony headphones and the wind noise is there but much much better.

Ah oh that makes more sense. I don’t go too fast either but I think it’s often the wind, anything more than a slight breeze and I’m told callers can’t hear me. Oh well I hope they improve that soon, meanwhile after being hit by an SUV I try to never ride with any headphones anyway, stay safe out there!

ANC is working really well for me.

The original AirPods Pros had a tendency to produce a stuffed ears effect with ANC on. One of the first software updates changed that but some felt that it reduced the strength of ANC. The AirPods 2 have had solid ANC for their entire run.

Wind is a worst case scenario for microphones and ANC. The noise is nearly impossible to filter out without significant distortions.
 
I there a way to test the sound quality of the AirPods? People are always complaining about the quality while on calls. No matter if FaceTime, What's App, Signal oder via Phone App, they always say it's really bad. Doesn't matter what kind of voice option is activated, like voice isolation or not. What's the problem here?
