I'm in the U.S., but work for a global company. My experience with the UK is Costco may be a mini Apple Store, but the folk there actually know what they were talking about. Last time I had my UK counterparts here in the states they wanted to go to Walmart and buy iPads since US dollars was cheaper than UK. They could not believe how unqualified the Walmart worker was in the tech part of a Walmart. We Americans are laughing, but UK folks REALLY laughing at us...................... Let alone Apple Store or lololApplecare. Think about it.
Not really if you have an AC router. I was surprised how fast my 270GB restore went with newest generation Time Capsule. Certainly faster than shipping

Can't remember the last time I didn't restore/recover from some type of NAS/apple TC device. Folks really plug USB devices in for recovery in 2015?!? Are they plugging in optical readers, that read microscopic holes in a plastic disc (dvd/blu-Ray) too? It's not 1995 folks!

Some of us really do still use wired devices for some things - usually because they are faster and more reliable. A restore from my latest version Time Capsule (with *gasp* an ancient technology rotating magnetic disk drive in it) takes over six hours - and god forbid someone else is doing a backup or restore at the same time cause that REALLY slows it down. A restore from my USB 3.0 super speed SSD takes about a quarter of that. And my TM backups to such wired USB devices have never failed or been corrupted, while my Time Capsule multiple times a year will detect a corrupted backup volume from one machine or another, have to re-create it from scratch (taking many, many hours at an inconvenient point, and LOOSE all my backup history. I can't take my TC with me when I travel but I can take my SSD.
Being a belt and suspenders kind of guy, I also use wireless and the cloud, but I have no delusions that various technologies have both upsides and downsides.
I could get my backup device connected to my router (Asus RT66u) and use it as NAS. Again, I suspect this will far slower than a 'direct' USB wired connection, especially for such a large volume. I'd expect around 90 min for the 240gb through USB3.0. Can any wireless connection give me similar results? I don't think so...
