Accessibility -> Assistive Touch -> Hand Gestures -> Double Tap set to Tap.
Now, this will not allow all the touches the Double Tap on the Series 9 watch allows....but it gets you 90% of them.
I use this all the time as my job and hobbies means I often have messy/dirty hands. I can do the Double Pinch and clear most notifications or get to a response area on the notification. It doesn't do all the things the Series 9 Double Tap action does, but it does get you close.....which is what I said.

- Opening the Smart Stack from any watch face and scrolling through widgets in the stack.
- Answering and ending phone calls.
- Viewing a message from a notification, scrolling through longer notifications with an additional double tap, replying using dictation, and sending a message.
- Pausing, resuming, and ending a timer.
- Stopping and resuming a stopwatch.
- Snoozing an alarm.
- Playing and pausing music, podcasts, and audiobooks.
- Switching to the new Elevation view in the Compass app.
- Taking an iPhone photo with the Camera Remote in the Camera app.
- Starting or stopping automatic Workout reminders.
- Performing the primary action from notifications, such as replying to an incoming message from a messaging app and snoozing reminders — including from third parties.

I have not tested some of the others, but these work.
- Stopping and resuming a stopwatch.
- Snoozing an alarm.
- Answering and ending phone calls.
- Playing and pausing music, podcasts, and audiobooks.
- Taking an iPhone photo with the Camera Remote in the Camera app.
- Performing the primary action from notifications, such as replying to an incoming message from a messaging app and snoozing reminders — including from third parties.
So, 55% of the list above.Maybe more if I tested some of the others.....so maybe not 90%, but still a lot.
Also, if you really want to do more. you can customize a single tap, clench of fist, and double clench.....so you could do even more with one hand.....but the tap action I have is enough for me.
And, I had this setup before the big Series 9 announcement....so it felt really underwhelming.....
