You absolutely can do both of those with double tap. I do all the time.
My original watch did not, the store replaced it, this one doesn’t work, either. Spent 1.5 hours with higher level Apple support, diagnostics etc. These two functions don’t work. I can pause a timer, but can’t stop timer when finished. Also still won’t answer calls.

I wonder what's going on with your environment to prevent them from working. Besides texting those are the two things I use the most for double tap.

I wonder, too. And all the functions I would be very unlikely to use are working. Those are the two I wanted when I upgraded to the 9.
 
I was hoping my series 9 would start letting me stop a timer or answer calls with double tap, but no luck.
When I got my Ultra 2, I tried Double Tap a few times and it was hit or miss with it ever working reliably. After installing the watchOS 10 beta for 10.2 (I don't remember which build it was) Double Tap was working pretty reliably. After installing the 10.2 release candidate, I noticed a huge improvement. Your 2 issues were the ones that never seemed to work reliably. for me, especially phone calls, a heavily promoted Double Tap feature and an enhancement to a feature I've used on every Apple Watch by tapping the screen.

On watchOS 10.2, Double Tap seemed to improve dramatically. I love being able to use Double Tap with Music, Timers, Snoozing alarms, and especially phone calls. I still occasionally find times when it doesn't work, but a large majority of times I get that satisfied feeling and I don't curse Apple as much when it doesn't work.

I had given up on Double Tap before 10.2. Hopefully, Apple will get things sorted out for you and you'll be able to use it the way it's supposed to work.🤞🤞🤞:)

But why would 10.2 work for you but not me? Although I have the series 9…and some people with 9s are not having these issues. 🙁
 
I wish I had an answer, It's strange that this is also happening on brand-new hardware Apple replaced for you. Did they let you leave with it still not working? Explain what they thought.

I had been in the store so long I didn’t want to wait to pair again. But is it really hardware if double tap works for all the other functions but the two I would actually use?
 
I have had an Ultra 2 for a week and worn it constantly in that time. Today I put on my S7 for the first time for a 'smart' day and lol all I keep doing is pinching to dismiss and pinching to view the stack.

Think it is one of those features that appears a gimmick but once you use it, it is second nature.
 
I really do wish the Double Pinch worked to dismiss these notifications as well.

When these appear and I do a double pinch/tap the little blue hand just does the shaky thing.

Would seem to be an obvious one to add?

Heck yes it would! On the workout summary page it still does nothing there also and the obvious action is to dismiss it.
