The majority of the time I have been using it for recently is pages and keynote at school, but I think that will change over the summer. I bought the Verizon one, so when my schools internet goes out, everyone comes to me to get the internet running from my hotspot (2 macs and an ethernet cable fix the 5 device limit.) I actually am using the hotspot right now in my car. I also use it for surfing the internet a lot when I am on the go or I don't need Flash, use it as my iPod sometimes, and check email and play games occasionally. The last thing I use it for is my apps, before I release them I do extensive testing on a bunch of different devices to make sure that it works.

I'll tell you what I plan to use mine for - once I get one!

I am the treasurer for a 4-H livestock auction. The whole auction is run on FileMaker Pro at 4 stations. I plan on using the iPad to allow me to monitor the auction and make adjustments from anywhere around the show arena.

Aside from that, I hope to use it as a proving ground for work that we can have an iPad to do milage, itinerary, and inspection reports - all paperless.

Surf the web & reading emails, the text looks amazing on the new iPad.
iBooks, Adobe Reader, Kindle - I just finished reading "The book of Cain - Diablo 3" and "I am Legend"
YouTube
Playing Kingdom Rush. This game is insane! I love it. http://appshopper.com/games/kingdom-rush It's on sale too! Highly HIGHLY recommended! iPad only :) (PS: on the iPhone try GeoDefense and GeoDefense Swarm - awesome games too).

Browsing my photo collection in iPhoto, organizing, editing, sharing etc
Messing around in GarageBand - so much fun.
I bought iMovie too - but I haven't had the time to poke around yet.

Numbers, Evernote, Dropbox, Notes - keeping all my "stuff" organized
Reminders - I usually set them on the iPad for the coming week and use the iPhone during weekdays to mark them completed. Works great!

And last but certainly not least: Paper (by fiftythree). Here I doodle my ideas and I keep a journal of sorts in it. Amazing app!

I bought mine for reading. I have a roomful of technical books, none I wish to give away and no room for more. I was able to re-buy all the books I most want plus some new ones and have them with me all the time.

I recently attended a 3 day seminar. All of the notes were emailed as PDFs. Instead of having to print them out and lug a 5 pound notebook around I stored them on my iPad where I was able to highlight and annotate them during the conference. The best part is that I don't have another notebook to take up space.

It is also great for reading in bed. I don't have to fiddle with a book light and it doesn't disturb my wife. I am not a game player but I do surf the web (more reading) and I don't have to replace my broken TV because many channels, and my cable company, stream to it.

I bought it as an experiment but it's changed my life.

Email, social networking, blogging, books, magazines, I stream movies & TV shows & have also started using iPhoto to work with images.

Surfing, Netflix, email, YouTube, ebook, manga, rss feeds, crunchyroll (anime), proof-reading, remote desktop, FB, sketching, etc…

Just about everything I needed a computer for.

It always has a charge.
Instantly on.
Grab and go.
Starts exactly where I left off.
Nothing to lug, don't have to fight for power outlets.
No cable management issues.
Always connectivity, WiFi or cellular.
Don't need a backpack for textbooks and notes anymore.
