MP 1,1-5,1 Some questions about Mac Pro 5,1 (Mid 2012)

Hi everyone,
I'm considering to buy a MP 5,1 Mid 2012 with these specs:

Intel Xeon W3565 Quad Core 3.2 GHz (up to 3.46 GHz)
16 GB RAM
ATI Radeon HD 5770 1 GB GDDR5
320GB HDD

So the questions:

- Can I replace the graphic card without lose normal apple logo boot screen?
- Can I boot OS directly from the NVMe PCIe SSD like an internal drive?
- What is the last compatible OS (also considering a graphic card upgrade)?
