Here's my suggestion

http://www.pielframa.com/ipad-cinema-model-tan-cases.htm

I love all their cases, but this iPad Cinema model will work perfectly in bed, and also anywhere else, in both landscape and portrait orientation. It also matches well with a wireless Bluetooth keyboard if he decides not to tote his laptop

You can buy it on Amazon http://www.amazon.com/Frama-Cinema-Magnetic-Leather-Apple/dp/B0073I7OHE/ref=sr_1_18?ie=UTF8&qid=1341545613&sr=8-18&keywords=Piel+Frama%27s or you can order on the manufacturer 's website. If it's in your price range, the craftsmanship and clever design are worth what they charge.

Someone on macrumors recommended this stand when the new iPad came out. I bought it and I couldn't be happier:

Monoprice iPad Stand

It's very easy to slip the iPad in and out of the stand. I slide my iPad in it as soon as I get home, and remove it when I leave. I use it all around the house, on the desk next to my desktop, on the table while eating, and I lay it on my chest when I'm lying down in bed.

any suggestions for the iPad Pro? did you get one? what are you using for it? or plan to use to hold it while flat back on the bed ?

I have a little desk next to my bed that I use. I will admit its not always comfortable but it works. Some kind of stand would be nice but I don't think it'd be sturdy enough.

That's similar to what I do. I use Twelve South's stand/easel on the nightstand next to my bed. This works great for viewing videos or movies.
