Someone on macrumors recommended this stand when the new iPad came out. I bought it and I couldn't be happier:

It's very easy to slip the iPad in and out of the stand. I slide my iPad in it as soon as I get home, and remove it when I leave. I use it all around the house, on the desk next to my desktop, on the table while eating, and I lay it on my chest when I'm lying down in bed.

he does that at times but his most comfortable position has to be laying flat on his back.

What about those "tray tables" for laptops that have a pillow on the back? If you can't find them locally, check on Amazon.

I have a little desk next to my bed that I use. I will admit its not always comfortable but it works. Some kind of stand would be nice but I don't think it'd be sturdy enough.

That's similar to what I do. I use Twelve South's stand/easel on the nightstand next to my bed. This works great for viewing videos or movies.
