Those sites are more akin to general stores; they don't have specific custom content per item. Apple has a lot of pages to update/test and database changes in the background.
As a ex-SCM/Deployment & Release manager, I can understand the need for some downtime to make absolutely sure everything is up and tested on the live servers before allowing the picky public to get their grubby paws on it.
Yes its nicer for us to not experience downtime, but in terms of product quality (the front end web experience) it is preferable.
..and the waiting does indeed build suspense....

While this is definitely true, there have been times (albeit rare) that Apple did do silent updates. One of the MacBooks (non-unibody, I think) was updated from the X3100 to nVidia 3400m without a single yellow sticky. (I forget if it was this particular MacBook but I know it was a MacBook). I also have a feeling that way back when the PowerMac G4s were "leaked" I think that was a silent update as well (not sure about this at all though).
Could this be the addition of the new iLife 11 or maybe even iWork software?
iPhone 4 version 2 release?
Main Apple website has a "the new MacBook Pro" graphic and the MBP page itself shows it was updated in the last 10 minutes.
