I think it would work out well. Obviously, most people would use the touch feature while the display was virtually parallel to the ground.
Think about it this way: there's a big push building right now for "standing computer desks" because sitting in front of a computer all day isn't good for you. But, standing for most of that time, like at work, solves many of the problems that can develop from sitting the entire time. Your body burns more calories while standing, compared to sitting. So, this flat touch feature would make doing that much easier without being forced to have a standing-only desk, or an expensive standing/sitting desk that can be adjusted for both.
And if you're standing and the screen is below you it prevents a lot (not all) of the "arm-fatigue" that can be problematic.
