I am craving sushi again today. I am a huge fan of sushi and Japanese food. The amount of work and detail a chef puts into sushi preparation can be beyond mind boggling. Like literally each piece is prepared for each customer each time. Quite often goos chefs put their hearts into preparing to serve that piece also
That was absolutely brilliant, what a consummate professional, who has a love for, and a vocation for his work; thanks for sharing it.
And I loved the distinction he drew - essentially, his philosophy of cooking ("you have to like to cook and eat, otherwise you will not be a good chef"), between "heart", "technique" and "atmosphere" and how a young chef had to master all three elements to be a successful sushi chef, "because technique without heart is not enough".
Brilliant.
