I am craving sushi again today. I am a huge fan of sushi and Japanese food. The amount of work and detail a chef puts into sushi preparation can be beyond mind boggling. Like literally each piece is prepared for each customer each time. Quite often goos chefs put their hearts into preparing to serve that piece also


That was absolutely brilliant, what a consummate professional, who has a love for, and a vocation for his work; thanks for sharing it.

And I loved the distinction he drew - essentially, his philosophy of cooking ("you have to like to cook and eat, otherwise you will not be a good chef"), between "heart", "technique" and "atmosphere" and how a young chef had to master all three elements to be a successful sushi chef, "because technique without heart is not enough".

Brilliant.

One of the things I have always loved about Japan and Japanese chefs is the amount of love and details that comes from their Heart when preparing food for people. You literally can taste the difference regardless of what food item it is in Japan when a chef puts some love into their work. It’s actually hard to say “some” when you see how much attention and detail each piece/item gets. From the looks and taste you know that a lot of love went into what was prepared. When each item is handed to you by hand they await for you to eat it and watch carefully as each piece goes into your mouth. What then brings them happiness is each smile that comes from you as you eat. Their focus then is on your mouth and eyes as each piece goes in. A thumbs up and smile is what then brings a smile to their face meaning they are satisfied almost like a student who took a test in school and the teacher handed back their test with an A+ (100%) on test result :)

In America,Europe, and other parts of Asia eating inside restaurants is different compared having Japanese sushi in Japan. In the US you sit outside,order and a waiter or waitress brings you your meal.

It was a terrific video, and the warm and wonderful passion (and knowledge) of the chef narrator for his subject was evident and an absolute pleasure to watch.

Unfortunately, I haven't had sushi for months.
 
I've been lucky enough to go on holiday to Japan 4 times in the last few years and can comfortably say that It's easily my favourite food. I know It's a cliché but the difference between proper high quality sushi in Japan and a bog-standard place in the West is astronomical.
Nothing better.

Same here Scepticalscribe, I can be patient there is no substitute for proper sushi, having lived and worked out of Okinawa, I became spoilt.

A small (excellent) Japanese café (must check their website) - Japanese owned, Japanese trained and Japanese run, - which has been shut, obviously, during the Covid-19 lockdown, (and with limited and inconvenient opening hours and days before then) used to have a stall every Saturday at the farmers' market, which is where I usually bought my sushi.

That stall, alas, is no longer in operation, and I am not sure when the actual cafe will resume business - I believe that I read that they have resumed offering a service of order and collect, which I may yet give some thought to and try to avail of.
 
Got my sushi to go tonight. Really craving sushi today
