Swiftkey lost me a long time ago, when it made me feel neglected as it was always adding features to Android but left iOS out. I happily switched back to the stock Apple keyboard for the longest time.

Now after trying Gboard (Google's keyboard), it's my standard and hasn't had a glitch yet.

Yes things can be a risk AND allowed by Apple, they just let you know, and everyone can make their choice. Just like they do on macOS with apps installed outside the AppStore ecosystem. The user has to disable the tighter security settings but can do so at their discretion....

It IS telling however, that only the native iOS keyboard is allowed for entering passwords... which again proves THE FACT that Devs can siphon WHATEVER one types on their keyboards.

Interesting logic indeed...
Is that kind of like when Flash has some potential vulnerability Apple can disable it on macOS for people? And that's with macOS that is actually more open than iOS. You'd certainly think that if third party keyboards were inherently risky on such a level where privacy would really be in question that Apple would do something about it, if not just not build support for them themselves.
