Just started watching through the Last of the Summer Wine (ordered the first 4 series once they announced its cancellation). The old stuff is fantastic. Dialogue heavy, ruder, more adventurous.
 
The Sopranos
The Wire
Breaking Bad
The Inbetweeners (for those of us who like a bit of immaturity now and again;))
The Ricky Gervais Show (the animated one)

The first 2 on my list, I have watched them through several times and I get more and more from them on every run-through. I'm not normally the type to watch something twice, but these are modern classics.

Breaking Bad is shaping up to be another, and Inbetweeners and Ricky Gervais are excellent british comedy.

Dexter would be on the list but I got bored with it after the third season. It gets an honorary mention.

A lot of shows that I thought were brilliant at the time don't stand the test of time, like the X Files or Blake's 7, so they're just nostalgic now (this mostly applies to cop shows and sci-fi which date quickly as society and technology changes).

I have to divide my choices into American/British because they're just so different, like The Office or Life on Mars UK versions versus the US ones. Even the same thing is... different. One just would never be made in the other, and vice versa:

American (mostly sci-fi/geek, what the Americans do best):
Battlestar Galactica
Stargate SG-1
Firefly
Veronica Mars
Toss up right now between Chuck, GR∑∑K or The Big Bang Theory.

British (all comedies, what the British do best):
Black Adder
Red Dwarf
Men Behaving Badly
One Foot in the Grave
Father Ted

Special mention - new shows -> Dollhouse (American) and Misfits (UK). Dollhouse got better as it went on, while Misfits was already verging on brilliant 'cult classic' after the first 10 minutes of the very first episode. See what the second seasons of both bring!
 
I'm genuinely surprised this Luther hasn't been mentioned in this thread. Idris Elba was phenomenal in it. Ruth Wilson was fantastic too. Despite there having only been one series so far, it is quite easily my favourite TV show. Can't wait for the second series!

I can't really pick my favorite between Weeds and EUReKA, they are both good. TAAHM and MitM are just modern classics. There are many more, Scrubs, Seinfeld, Frasier, How I met your mother, In Treatment, Monk, Perfect Strangers, Dexter, the german spin-off from The Office is really crazy, Diagnosis: Murder, Full House, Home Improvement, My Wife and Kids, Family Matters, The Cosby Show and definitely Married… with Children. They are all good. Is it allowed to nominate the Apple Keynotes?

German telecommunication stuff is pretty much sophisticated and cheap. There are carriers around here offering 100/10MBit connections via Fibre to the Home for 35€/Month with traffic and landline flatrates included. This is limited to a couple of districts in Cologne however. Baden-Württemberg offers the same thing via cable at 50€, North Rhine-Westphalia and Hesse offer 128/5MBit lines with traffic flatrate at 45€. Mine's only 50/10Mbit via VDSL2, but non shared and widely available.
