What I would like to see is a connected touch, maybe some deal with at&t/t-mobile/verizon thats extremely cheap I'm talking 5-10 bucks a month for data only. Something to cruise the net/check weather etc that isnt horribly expensive and keeps the touch connected online cos finding wifi (at least for me) sucks. The other thing I'd like is a speaker built into the touch something akin to the iPhones speaker that I can listen to tunes and not have the headphones on all the time.
It would be nice if the Touch was a full-featured WiFi-only phone, with some limited ability to also be a true cellphone. Maybe something like it uses the cellular network for voice, but when WiFi is available, you get data too.
The simple bottom line is that I'm not about to drop $80/month for an iPhone, particularly since I get a Blackberry for free through my employer, which means that my personal cellphone is getting used or carried less and less (I'm debating dropping it entirely).
Plus on international trips with the Blackberry using voice & data heavily, I've already gotten hit with the $1500 phone bill "gotcha". Granted, I'm far, far less likely to make ~5 hours of international phone calls on my personal phone in a month, but I'm simply not going to tolerate that magnitude of service cost for mere personal use.
However, the reality is that the technology potential is highly divergent. I also like the general idea of being able to skip the laptop and hook right into a display for making presentations...and if you're going to do that, then having an LED laser built in would be a nice touch...so long as the iPod doesn't end up being physically tethered (and thus, the presenter is unable to walk around, point at screen with LED laser, etc). As such, I see the "Touch Presenter" to be a very narrow niche product and thus, not likely.
