So the 2019 21.5 inch iMac is the only product apple sells that can replace my 2014 mac minis.

I have a 50 inch tv and could put the iMac behind it out of site.

I need 16 gb
I need a 1tb minimum boot drive
I can use the i5 six core

this is 1350+180= 1530

so my question is how do I deselect the 21.5 inch imac screen and only drive the 50 inch tv.

other questions does this imac have the t2 chip?

What is the resolution of your television? In an effort to push users toward newer retina machines, Apple removed antialiasing of fonts in recent iterations of MacOS. Everything past Sierra might look really bad on a screen that large, if PPI is low.
 
Agreed a current-gen Mac Mini would be better, probably. It would be $1300 with a 6-core i5, 16GB of RAM and the 256GB SSD and then just add an external drive (like a 2.5") for the content.
