Does the Thunderbolt display port on the 2011 mac mini work as a normal display port?

Yes, all Apple Mac Thunderbolt ports allow you to use them as plain vanilla Mini DisplayPort, but if you use it in that way, you give up the Thunderbolt functionality while using the monitor.

not always true use the t-bolt unit first.

like a lacie or a promise pegasus.

    mini lacie lcd

    or

    mini promise lcd ,

both the promise pegasus and the lacie pass the video via a second t-bolt port to the lcd.

So, I could use two identical monitors, one on the HDMI port and one on the Tbolt port, with appropriate adapters as needed. Hmm, I suppose this might be the case to go with a mini with discrete graphics.

Absolutely. The mini has had two displays out for a while now. At one time it was mini display port and mini DVI.

    Now its thunderbolt and HDMI.
