I think the lines should be moving fairly quickly for the reserved phones. They most likely will not be activating them in the store unless you insist on it. Last year with the 3GS, they just let people take them home to open and activate with iTunes. I would imagine it will be the same this year plus some given the huge number of pre-orders that were reported.
 
I'm still unclear about the whole "opening at 7am" thing. The Apple Store I selected is in a mall that doesn't open until 10.

Mine too (Houston Galleria), But a few days after the 3g launch they were still opening up the apple store at 7. Im not even going to try to deal with the lines, in the confirmation email it said it would hold the phone for me untill the end of the business day. so i was planning on strolling in around 4 or 5 hopefully then the people who didnt reserve one will figure out they arent getting one. what are yall's thoughts?
 
Do you have an iPhone? If so, download the Apple Store app, select the "stores" button along the bottom, find the store where you made your reservation, and tap the "reservations" tab. If your reservation is in the system it will show up there.
No I dont have an iPhone but I have an iPad?
 
our mall opens early for things like this ... the entrances will be unlocked (or select ones will be unlocked), but only the Apple Store will be open once you get in the mall, everything else will be locked down/closed.

A lot of malls also open early for mall-walkers, etc., so they may well be open by 7 am anyway. When I worked in a mall back when I was still in school, I worked at 7 am; there were always people in there chugging away already when I'd walk up to the door.

home activation was not an option for the 3g launch. as long as they are allowing people to activate at home the lines will all move quickly, since it is just a simple matter of paying. the 3g launch lines were slow because it took almost 30 minutes to complete 1 sale because they had to activate and period of time that day the activation servers were down
