Iam from india and i have iphone 7 plus turbo sim from USA.

Its working but now i want to update the ios so i want to know what would happen to my iphone if i update it

I heared that i my turbo sim gonna stop but i just want to know that can i restart it with a new turbo sim

If you use any type of SIM sandwich solution to unlock your device and update it, you will disable the “unlock”.

However, why purchase a locked devices instead of paying for it unlocked? Makes no sense to live with that hassle.
