Carrier [UK] Reasonable eSIM Plans?

I want to be on a different network to my partner - she is on EE.
And I want also to be able to access O2 (and, for as long as they keep going as a separate outfit, Vodafone).
No - because EE say:
"The plans must all be in the same account."
And we are not. That is why I have to look up what gifting data even means!
Oh I didn't know that
I have the unlimited plan so thought any plan could data gift!
Since posting this, I've cancelled my iD mobile SIM (I thought coverage/speed was pretty good on Three) as managing the account without being able to receive SMS messages to the number proved too difficult. Instead I've gone for the marginally more expensive 18 month contract on giffgaff which I pay £10/month for 25GB data. That's more than enough for me as I can tether my phone if I ever run out.
Giffgaff support has been great, and I can receive 2FA codes via email. O2 coverage seems slightly more patchy, but has been fine the vast majority of the time.

Spusu confirmed to me that you can message them to activate the sim if you have put it in an iPad. They use EE
