Resolution Independence isn't missing.
Can you please post screenshots of what you described?
If things that were rumored are included on the list, then the lack of read/write ZFS I guess belongs there.

The Mona Lisa / Ballmer iChat / Photobooth effect...
And the upside down too!

The secret features? Apparently making the finder look like iTunes, plus the most poorly executed idea ever (Stacks).
I wish they had kept that last one a little bit "closer" to the chest. In Steve's gall bladder, maybe?
That's freaking hilarious (and I agree), although a better place would probably be his colon...
- -Option in Dock Preferences to toggle between 2D/3D dock.

Not asking you specifically xUKHCx, but if I had a copy of Server running in my house on a different machine, does anyone know what this preference would allow me to do ?
Is it a backup feature, or what ? It could keep 2 accounts in sync... really well right ?
Of interest, the upside down effect and a few others not in Photo Booth or iChat are able to be used in Address Book if you take a photo for a contact. Only found them today when adding a photo in for someone else...

Was there ever an official announcement that Fast OS Switching was ever going to be included in Leopard? I've heard this mentioned around as a missing feature, but I don't recall Apple mentioning it or any subsequent internet/magazine articles about it.
Address book doesn't do Bluetooth anymore.
Seriously?
I daily use a bluetooth connection through iSync to sync Contacts / Appointments / ToDo's to my cell phone.
Does this break in Leopard?
No, not at all, there just isn't a button there anymore. You can still sync your phone via iSync.
