There are lots of videos on Youtube showing people updating iPhone 6 Plus's from iOS 12.5.5 to iOS 15. Anyone on here done this? Did it brick your phone? If not, how does it work?

The maximum version of iOS for the 6/6+ is iOS 12.x.

I would say whatever 'lots of videos on Youtube' you've been seeing are fake - or someone is actually updating a 6s/6s+, or pulling some other slick move they don't show you.

Not even a jailbreak allows you to do this.

I wouldn't trust much of what you can find on YT.
