I went to Intel to look at the quad-processors. I found the X5355. One thing that I didn't find was anything that matched the 3.00 GHz quad-processor in the 5000 series that matches Apple's offering. What does Apple use?

Oops! I didn't look far enough. It's the Intel X5365. Intel has announced in their road map that it is reducing the price on 12 August 2007 of the boxed version. There is no indication that there will be a reduction on the OEM pricing as there is for the Intel X5355.

Would it be too much to expect with the 36% price reduction of the X5355 that Apple would simply make this their standard offering?

Apple gets a special one that isn't available to other OEMs or resellers. :D

Ive considered the DIY upgrade octo-upgrade path, but it would be more economical if you got a 2.0 macpro really cheap, then boosted up to an 8-core monster. I run maya (and alias/solidworks in XP) and would love to have 8 cores hacking away at a render!

Not too much at all, it's the most logical thing to assume.

As RichP said, Apple are the only ones (AFAIK) to have the X5365, it's price on the road map is one of introduction.
 
What would happen if one only upgraded one chip - is that possible? Essentially having a 6 core machine...that would be an interesting experiment...

That means it's cheaper to buy a refurbished 3GHz 8 core Mac Pro with warranty intact for only $1200 more than the refurbished 2.66GHz 4 core Mac Pro. So no point in doing this....

I think you missed the point. It's about providing an upgrade path for those people who ALREADY own a Quad and want to go to Octo. Your seniaro assumes that a person is making a choice between buying a MP 2.66 Quad and then upgrading it to an Octo, instead of just buying an Octo. Of course it would be better to go with the Octo IF you don't already own a Quad.
