Just for kicks I tried my first-gen iPhone SE running iOS 15.2 which has a Lightning connector to complicate matters: absolutely no dice on Tiger or Snow Leopard but USB tethering works fine on Mavericks; I'll test Lion and Mountain Lion next.

You could try tethering a WiFi-to-Ethernet bridge to the iPhone‘s hotspot and wiring that up to the Mac.

Via WiFi.

LOL the very point of tethering is to avoid Wifi. I am stuck now with Express being used to get internet to the Quad, while I would want it to be back to its use for Airplaying music (because there is some issue with Extreme I got, it fails to configure to join a network). USB tethering would make life easier, if it worked.

So...

USB tethering to the iPhone SE running iOS 15.2 doesn't work on Mountain Lion. The "iPhone USB" interface is detected but shown as not connected.
Bluetooth tethering using the PAN profile works out of the box on Snow Leopard, but not at all on Tiger; the profile is shown as available but no network interface is created, and I can't (figure out how to) create it manually.

Bluetooth PAN tethering works out of the box on Tiger using an Android 8.1 phone. Bluetooth is much less of a battery hog than WiFi.
