Verizon no contract pricing?

Starting a new contract/account with Verizon ( online or in store ) and choosing to pay full retail ( month to month ).
I am waiting until it starts to see how bad the throttling will be. Don't want to buy a full retail phone for 3mb down. Might as well go with the tiered crap plan.

Also, I've never done something like this before. When I bring I sell my 5s and bring in the dummy/temp phone, how will it work to switch my line/number to that phone? And then again, when I buy the 6, and make that the phone on my line? Just want to make sure I don't screw anything up, that they don't screw anything up, and that this should all work.
You should just be able to take care of all that under your account settings in My Verizon.
So I wouldn't even need to go to the Verizon store?
My only concern is that I'm not sure how to handle switching from an iPhone (smartphone) to a dumbphone for a week, or even using a device such as a Blackberry (depending on which I can get my hands on), then going to using the iPhone 6. The whole thing with different SIMs, etc, I'm just so thrown off trying to think about it all..
