You can, there was a little icon for brightness.

i see it now, though it requires more controls now... 2 taps at least.

Touch Bar is a BRILLIANT way to merge how you use a laptop to be more tablet/phone like. Seems like Apple's plan all along. So far a lot of things TouchBar can do isn't done more quickly than physical keys pressed without even needing to look.
