I initially had my Action button set to the flashlight.
I decided to try out a Shortcut. I set up a simple if shortcut to unlock my smart lock on the front door.

If door locked / unlock
Otherwise / lock

Works like a dream!

So I followed all of those, and made sure the shortcut was also available on Apple Watch, but when I press the action button it says shortcut failed. It doesn’t give me any reason. Any idea what is happening? Did you encounter this? It works when I press the shortcut button on the Shortcuts app on my iPhone.

My lock automatically unlocks if I leave a perimeter, but when I walk my dog I don’t venture out of the perimeter so I would love to be able to unlock with the press of a button.

I push the action button by accident many times a day. So rather than accidentally start or stop a workout I just have it mark a waypoint. If I happen to create a waypoint, no harm, no foul.
flip your watch upside down and change orientation in settings.

Here is a good one! I just read about someone using it for Pinging their phone. I set it up in less than 30 seconds with shortcuts. I’m pinging my phone all the time. This is gonna be great.

I don't think it's possible (don't have an Ultra), but it would be nice if you could link different Action Button functions to different watch faces.
Might have already been answered, but you could tie it to a focus mode. I think you can change faces based on focus mode so you should be able to create a short cut to do something based on focus.

I use mine to toggle WiFi on/off. Seems I have some stuttering issue with my watch and when I walk out of my wifi range on walks/runs. It happens a few times each workout.

Probably because they might be dragged into a lot of lawsuits if the recording part is not revealed to the other party.

Laws vary by country, or even by State in the US. Many jurisdictions have one-party consent requirements for recording phone calls.

Likely it's not Apply trying to be the world police :)
