Put me down for a portable espresso machine with milk-frother. The wife always wants a latte at the most inopportune times and the only thing I consistently have with me is my iPhone 5.

Not sure what you mean by surprises? What you see in IOS7 is what your going to get, nothing more, nothing major anyway. How could they add cool new stuff in the fall and not have time to test it? Maybe 7.5 will have a couple new features but most of that will wait till 8.

Wish there were opacity settigs and animation options and delay settings too. But this is Apple we are talking about... How many OSes did it take to just get custom sounds?

If most of the OS is tested and solid, of course they can add functionality before the public reveal in the Fall. They've done it in the past. By surprises I mean added functionality to the Notification Center and maybe quick reply. Other things like new ringtones and new wallpapers could also wait until the Fall.
 
I wish when you to put a pass code on your phone you have to enter in your restriction passcode in first. This would save alot of people with friends who think its funny putting a pass code on their phone.

iOS6 added panorama in the GM that was not present in any of the betas.

Likewise, I believe Siri (the biggest feature of iOS 5) wasn't announced at WWDC, but rather in the fall alongside the iPhone 4S announcement.
