I think the design shift to the white has more to do with the ability of the human eye to read fonts easily and quickly on a white background. My wife has less headaches reading black text on a white background than white text on black backgrounds. Her headaches are related to her glasses and straining her eyes reading on dark coloured backgrounds.
I agree in principle.

Yet Apple selected a UI font that is difficult for many with less-than-perfect vision to read. It's a contradiction.

I agree. It's too thin, and they need to fix the opaqueness of the backgrounds so they work and you can read what's there.
