Definitely QUICKSILVER for me- that's the one app that I use the most. At first I thought it was pointless, but then I started to really use and appreciate it and now I can't live without it.

i reckon sizzlingkeys4iTunes is the best iTunes add-on there is.

Adium is much better than Messenger for Mac, but it still needs some improvements ie AV support

iSquint is a great program as well. Converts pretty much everything to MP4
 
Although I don't use it, Xtorrent is an amazing app. ;)

No one has mentioned any games so I didn't know if I was meant to but if I was Warcraft III and World of Warcraft jump to the top of the list. With Kitty Spangles Solitaire, WingNuts 2, Pac the Man X, PuzzlePoker, and KrossWordz getting a lot of my time after the 2 Warcraft games.
 
Delicious Library

Recently I've been obsessively using "Delicious" Library. This program has really entertained the organizational-side of me which comes out of hiding every so often.

Living in Japan, my boyfriend and I, have been building a fairly large library of movies and tv shows. Before getting "Delicious" we were constantly forgetting what we had. So with very little effort and only a few hours I catalogued every single DVD and/or movie file we have. Finding the DVD information is very easy with a direct connection to Amazon.

Our library is up to 241 entries and growing daily. Soon I'm going to number the actual DVD's and add that number to the library which will make finding the physical DVD even faster.

One side benefit that has come is that we are able to find shows that we both want to watch much faster.

Anyone else having fun using "Delicious" library?

I wrote a blogpost (direct link) about the 5 apps that make and 5 apps that break my Mac-experience. My perspective is one of which apps fit the mac-philosophy of simplicity and elegance the most (and the least) and allow me to be most productive at a given thing. Hope you enjoy.

Link removed as my webserver was crashing. Anyway the five apps were: Quicksilver (the world at your fingertips), dictionary (well, I never had a universal spellchecker before), scrivener (great app for writers), transmit (simple FTP-client), and Apple Mail (just does the one thing well). With runner's up: voodoopad, adium X, textexpander, and some others.

Bad apps were: Microsoft Office (too cluttered), Finder (obvious), Spotlight (no metasearch), iPhoto (bad with large amounts of pics), and Safari (outdated).
 
If I had to pick a single app (besides Safari for browsing MR) it would be Keynote. I give lots of presentations, and I can't imagine going back to Powerpoint now.

Looking forward to improvements of core apps in Leopard - it looks like Mail/Address Book/iCal will do more of what I want them to do...

A good one I've just found is iStat menu, it's just like the istat pro widget, but puts everything in your menu bar, as well as making improvements on the clock/calendar in the menu bar.
