On the Apple Watch Ultra I switch between Contour with date complication and Chronograph Pro with date, temperature, sunrise/sunset and activity complications.
 
When I was using my AW series 4 regularly, I switched between these three. Maybe the modular one was the most used.

Contour sometimes cause I think it looks cool and my previous series 4 didn't have it

Nike bounce or Nike digital on weekends usually with colors matching whatever outfit I'm wearing.
 
Depends on what style of strap I'm using.
  • Nike+ sport bands or sport loop: Nike Hybrid or Solar Dial
  • Woven nylon or braided solo loop: Modular, Solar Dial, Wayfinder, or Count Up
  • Alpine loop: Wayfinder
  • Stainless steel or titanium link bracelets: Chronograph Pro, Count Up, or GMT
  • Juuk Vitero: usually Solar Dial
  • Leather bands: Wayfinder or Chronograph Pro
  • Milanese Loop: California or World Time
 
Metropolitan on my Series 8 aluminum and always the lucky horse on my Hermes.
 
California on my AW7. Occasionally I’ll switch to Metropolitan for a change of pace. My previous AW’s were usually set on Modular, which I find very practical, if a tad boring.

They all look like cheap 2D renderings of real 3D watch faces. It looks like you're wearing an animated cartoon on your wrist. Then again, mediocre is the style now.

I think you must be referring to certain aftermarket watch “faces” (usually just background images), or Android watch faces. Apple Watch faces (even the ones adhering to the traditional clock dial paradigm) are quite unique, modern and smartwatch-like. The majority of the faces are not even remotely possible on mechanical watches.
 
If you want to wear a hideously large toy box on your arm, filled with little bells whistles and shiny doo-dads, thats fine with me. But as stylish as you want to appear, they just look mediocre, like Bobby's First Watch.
