I doubt it will happen but I would like some iCloud improvements:
- Wifi codes in the cloud: if I have used it for my iPhone, I want it to auto work on my iPad and mbp
- Shared reminders
- Shared calendars: sharing once, everytime you add something it gets added to all, instead of having to invite everyone for each item
 
Improvement with Maps will have nothing to do with iOS and its future upgrades. Issues are with the backend not the front end an and updates will be rolled out transparently.
 
  • Fix the Wifi Syncing Issue
  • Fix the iTunes match issue (unable to delete specific songs/download specific songs)
  • Make Notifications sync (When I read an email on my mac, it still shows up in mail/notification centre)
  • Show SMS Timestamp
  • I'd love a recently played podcast thing in their crappy app (or just remove the podcast app entirely)
 
I seriously doubt we will get any new features with any of the 6.x updates, just bug fixes. Apple has plenty of bug fixes to do and we really didn't get any new features with 5.x updates.
 
Maps that don't get you lost? Lets start basic functionality.

That would be a good start. Right now, i'm just hoping they improve the mapping experience and maybe iron out a few bugs. Oh, and please optimise the App store too, not much problems for me, just that it's quite slow in rendering.

Highly doubt Google Maps will return in 6.1, maybe even impossible. Apple spend months developing it and announcing all the goodies, it's not gonna backtrack now and remove it. The only thing they will do is improve it.

Believe it or not shared reminders and shared calendars already exist. When iOS 5 was released you had to log into icloud.com to share reminder lists. With icloud.com 2.0 for some bizarre reason that function was removed, so many of us have shared reminder lists but we cannot modify permissions or create new shared lists. OS 10.8.2 on the Mac can share reminder lists.

You can also share calendars via icloud.com. In my family we all share our individual calendars - my kids can see each other's calendars, I can add/modify/delete anything on my kid's calendars and we have a family calendar everyone can see. Nobody needs to invite anybody to anything.
 
I'm hoping an improvement to Maps and an improvement to the stability of the iTunes app.

Seems like it's always slow, or crashing on me (iTunes app).
 
6.1 will add a few more cities to Flyover, that's it. Apple's iOS team is genuinely terrible, sorry to say, because I only use Apple. They need more intelligent people, with better ideas, they currently have nothing. It is so pathetic that they can't add a single breakthrough feature for every new iOS iteration, I mean just the fact that there is Flyover (useless feature) in place of usable features says it all.

basically cut down on the repeated nature of time consuming needless tapping !
 
just want the stability ios had !! ios 6 just keeps crashing on my 4s. apps crash sometimes, very often, the phone restarts by itself, the home menu its sluggish sometimes, and i could go on...any one else?
 
The ability to share Reminder Lists. This was a function in iCloud.com before version 2.0 came out with iOS 6. The function is absent in iCloud.com 2.0. I hope it is reimplemented in iCloud.com and added to iOS.
As was mentioned above, you can share reminder lists and calendars with OS X 10.8.2. I didn't know that you could do it through iCloud previously. I wouldn't make use of it, but for those who prefer it (or don't have OS X 10.8.2+), hopefully they'll add it back.

3. Ability to add individual contacts to DND instead of using lists (I really only want my wife and parents to have the ability to contact me when DND is enabled).
There's a fairly easy solution: create a new group called "Do Not Disturb Exceptions" (or what ever you want to call it), make that the exception in the DND settings, and then add or remove people to the list as you see fit. The benefit of this over your proposed change is that any edits made will automatically synchronize across all iOS devices (unless you want each one to have its own exceptions, in which case you can make two groups), and you can make these edits from your computer as well. The computer editing means that you can modify such lists much more easily than from an iOS device.

The big change I'd like to see with DND would be to have it work even if you're beyond the lock screen. I occasionally have applications open (such as timers) but still don't want to receive calls or texts from my non-exception contacts.

No problems with my or my wife's 4S, nor any of my family members (three more 4S's). While that doesn't rule out software-side problems, it sounds like your phone has some issues.
 
All I want is an offline Siri. Does she really need an internet connection to read or dictate a message? I wish she could read email too....
 
I know we'll never get it (maybe iOS 7), but quick reply would be a godsend!

I could really use a time-stamp on every text sent/received. That'd be amazing.

The ability to toggle Wi-Fi/Bluetooth from the Notification center would be nice too, but doubt we'll see that.
 
What are live app icons?

For instance, an icon for the Weather app that accurately depicts the current temperature and conditions instead of always showing 73 degrees and sunny. Or a Clock icon that shows the current time.

While we're on the subject of icons, a new icon for Photos would be great. The current one is awful.
 
The ability to upload email attachments such as Dropbox files directly from the mail app!
