Why not have the Ipad default to the easy function and allow a user to turn on the advanced gestures/functions via a Settings decision?
Apple has done this before. Logic Pro, for example, starts up with a default GarageBand-style UI and function surfacing. If you want all the functions surfaced, you have to tweak the setting in Logic’s preferences. I believe FCPX does the same thing to help people moving up from iMovie.

She gets paid to showcase Apple products. Probably a no-brainer to rationalize the purchase of more (expensive!!!) gear.

That CPU comparison is mostly based on single-core performance but I'm considering the chipset as a whole. Honestly, one of my thoughts when they released the 2018 iPad Pros was they're closer to replacing Intel on Macs than I had originally expected.

Apple switched from homogeneous to heterogeneous processing on the A12X (well, A10 -> A11 really) and I believe they increased from 6-core to 8-core so multi-core performance increased by 100%. A12X is also when they added the Neural Engine on iPad. They also improved storage performance, and yes, that was mentioned in keynote although they never really go in depth.

Here are some SSD performance benchmarks of the 2017 iPad Pro 12.9 512GB and 2018 iPad Pro 11 1TB.
Wow, I did not realize that the SSD performance between the A10X and the A12X was so large (even accounting for the 1TB vs 512GB impact). If they doubled the A12X then they're running along the 2000 MB limit which puts it relatively on par with desktop SSDs from a few years ago (I believe the high-end Macs with T2 were near 3000 MB, but I could be wrong).

Still, I viewed the SSD in iOS devices more akin to high-quality flash drives rather than true SSDs, but looks like I've been wrong.

I know I am being pedantic, but you either want to use EDT (Eastern Daylight Time) or the more universal ET (Eastern Time) as the Eastern Time Zone is currently in Daylight Savings Time and not using EST (Eastern Standard Time) otherwise your time is 1 hour off from what it reads as.
 
That's easy, they can give it a 'classic' display toggle. But those of us paying >£1000 for iPad Pro really want more than a Granny friendly UX. There's so much wasted space with the menus, layout & icons - it's ridiculous to have everything behave the same as it does on iOS.

This was one of my gripes with the switch from iOS 6 to iOS 7. iPad folders on iOS 6 take up the entire screen and show a lot more apps than a 3x3 or 4x4 square in the middle.

Actually, the rumor is that that's the embargo for unboxings and initial impressions. The review embargo is usually a few days later.
 
That's not because of an embargo. You need more than a few hours to do a proper review.
Yes, and they always embargo it so all the reviews happen at the same time so that reviews don't get rushed to be the first ones out. There's two embargos, the initial "hands-on" and then the review.

YouTubers buy a lot of stuff because it’s part of their business so they are able to write all this stuff off on their taxes at the end each tax year as business expenses and declare lower income and get taxed less.

Just look at all the Automotive YouTubers buying insane cars regularly, it’s a great win-win for them.
