I updated to iOS 14 and now iTunes won't recognize my iPhone to sync music (I manually manage my music, no Match or Apple Music). Will Mojave's iTunes be updated to support my device again? Syncing was fine with iOS 13.
Works fine for me:
- Mac mini 2018 running Mojave 10.14.6 (18G6020)
- iTunes 12.9.5.5
- iPhone XS with iOS 14
- iPad mini 4th generation with iPadOS 14
Both iDevices were previously running 13.7 (the one released a couple of weeks ago) and synced to iTunes fine with iOS/iPadOS 13.
Like you I manually manage my music & video (all files are local) although I have been a longtime iTunes Match subscriber. I do not use Apple Music.
The iPhone gets lots of music and some videos synced. The iPad mini gets no music synced but a lot of video. The iPad mini still streams my iTunes Match library.

Did you do an over-the-air upgrade from iOS 13 to iOS 14 directly on your iPhone (i.e., bypassing iTunes on your Mac)? If so, your iTunes would not have received the special patch that it presumably needs to sync with your iOS 14 device.
I updated both the iPhone XS and iPad mini 4 directly from iTunes after doing a backup. As always, I downloaded their respective complete IPSW files, started a manual installation with Option-key + "Check For Update", and selected the appropriate downloaded IPSW file. I avoid the delta updates and all iOS over-the-air updates.
Same with macOS. I always use the standalone Combo Updater when I upgrade beyond version x.y.1.
