The privacy policy in chrome is really only relevant if you stay logged into your google account at all times. Log out when you don't need to be.
Anything in Chrome that can considered a privacy risk can be disabled in options. Heck, Chrome doesn't even set its search engine to Google by default. It asks you what you want to use at install.
I wouldn't recommend Iron. All it does is hardcode off the same things that can be disabled manually in Chrome. It updates much slower than Chrome does and the fact is, it doesn't do anything special privacy wise. The whole Iron product is essentially a sham.
