I have the polycarbonate MacBook. It's not as thing and the graphics is not as great, but for everything else, it excels. I edit a bit of video (see sig) and do my fair share of light graphic work. No problems thus far.
 
the old ones are good if theyre not going to be used for much of anything short of using the net or documents in office and stuff like that.

but if you plan to stress it a bit with photoshop, a game or two, or any sort of intensive work; id opt for the new alu-MacBook.

they offer better graphics performance which helps in overall system performance (as it isnt eating up your Memory like the previous built in onboard gpu); faster memory and FSB of course.

The display is much more accurate and higher quality than the previous, seeing them side by side, the older one was just unbearable to look at especially in bright (natural lights), the newer one while its concealed in glass has a higher density to lighting and making it easier to use in brightly lit places.

its a pretty solid machine and youll be able to run apps much more smoother with the specs it has compared to the previous line of macbooks.

I don't necessarily agree with this. I run Logic applications frequently, along with games like C&C3 occasionally on my Macbook, rarely restart it (only software updates), and have had folding@home running almost every night while I'm asleep (meaning almost 100% CPU used for around 6-9 hours). It's nearing the one year mark in about a week, and it still runs as beautifully as the day I got it. Couldn't be happier. There is no doubt the new Macbook is a lot more solidly built, and will run better than the old one (as there are newer technologies), but the old one isn't really bad for what you list.

That said, I would personally go for the new Macbook if you don't have anything else you'd like to spend the extra cash on, OP (such as accessories, upgrades, textbooks >.>). It's a beautiful machine, and if you haven't checked them out in person, I think you'll fall in love with the new design as well. They're both gorgeous. Unless you're doing some gaming or GPU-intensive activities, I don't think you'll notice a huge boost in day-to-day activities.
