For the first couple of months with my Apple Watch 10, all 5 vitals would be measured in the sleep section of the Health app > Vitals. However for the past weeks, heart rate data doesn’t show.

If I go into the heart rate app and do a scan there, it works just fine. It’s just not measuring when I sleep (or at least it doesn’t show under Vitals). What could be the cause of this?

Last night I made sure to make my watch band extra tight to ensure it doesn’t sit loose but no luck.

If I go to the heart rate section of the Health app, it shows data from all night (although it looks a bit odd it doesn’t vary at all during the night + it says “trend unavailable”)

I discovered my watch didn’t track heart and temperature unless I used the sleep focus instead of do not disturb at night. And had to create a bedtime and wakeup time for it to use which I can’t really stick to because every night and morning are going to be different, but it’s more or less in the range

can you take the heart rate manually? can you take an ECG?
If the answer is yes, contact Apple support to help troubleshooting, can't recall ever seeing someone with that problem.
If the answer is no, it seems the heart sensor isn't functioning anymore, contact Apple

ECG worked fine. However it seemed that the most recent Apple Watch update solved the issue. Super odd but so far it’s working again now

was going to suggest a reboot of your phone and watch; which happened when you did the update.

sometimes things just get a little confused.

also on the watch, sometimes an un-pair and re-pair can sort out issues. you can usually restore from backup. I've had this fix extreme battery drain before.
