@WeegieMac, It's not possible to access someones device without knowing the root password. If you change it in Terminal from the stock password, it's impossible to access the device through SSH. The jailbreak team explained this recently at the jailbreak conference. I agree with you that Cydia is full of bad tweaks and bad themes but at least you get to choose whether to add it or not. That choice is the reason why people do it.

There is also many, many useful things that help to make the experience much better and more convenient.

That Notification Center tweak looks very smart, I'll give you that. The stock Notification Center on the iPad is very poor indeed.

On the video, there looked like there was a stutter or little 'skip' in the beginning of the animation when swiping the screen away to reveal 'MountainLionCenter' ... can anyone who's tried it on a new iPad tell me how it performs, smoothness wise?

It's not been released yet. This guy was using a beta version so it's possible that UI animation stutter will get ironed out. Hopefully it should be on Cydia today for all us to try out. :)
 
I'm just responding to the title of this post.

I use my iPad a lot. Not just to browse the internet, or run apps that look cool or act cool. Most of my usage is around where I live.

I live at a Buddhist monastary and have fairly limited knowledge of mechanics, so I use my iPad to download engine specifications for both repair and ordering parts over the internet.

I also keep a database of most of the diagrams I download so this information is with me at all times. The database I use is FileMaker Pro on both PC and iPad.

Also, I am constantly updating USCIS documents on my iPad for printing at the request of the temple Abbot who is always needing various forms for helping folks from Southeast Asia to obtain their citizenship in the US. As well as typing many letters for the Abbot. I type the letters in MS Word on my PC and upload them to my iPad using WinSCP (PC-side) and iFile (iPad-side), to take to him for his approval before printing. I print these from the iPad on an AirPrint capable printer at the temple.

Plus, being a monk and having to chant a lot, I keep all my chanting books in PDF format on both my iPad and iPod Touch, which I keep with me every time we chant. I use the iPad when chanting at the temple, and the iPod when chanting outside the temple.

Both the iPXd's have become an invaluable tool that would be lost without having them jailbroken. More particularly the ability to copy stuff more easily from my PC to the iPXd's.

But the biggest plus is this. The Abbot does not know how to use a computer, nor is he inclined to want to learn, but when there is something to show him, like an email account I set up for him, or a Facebook account I set up for him, or something on YouTube I think he would be interested in seeing, I just take the iPad over to him for him to see it. He doesn't even need to know how to use, and a simple swipe to move the page up or down is easy for him to remember, or pinch in or out to zoom ... easy as pie.
