It was recommended to me a while ago, and I thought that tonight would be a good night to check it out.

Wild Beer do a lot of experimental stuff - and produce some outstanding beers (their 'Millionaire' is superlative). According to the label on the bottle, this one is modelled on a classical (Belgian) Saison beer, with apples (real apples from Somerset), "bubbles" and the sort of hops and wild yeast that have the purists swooning.

Wild Beer pride themselves on using only natural ingredients - which makes for expensive beers that tend to be extraordinarily tasty. They also experiment a lot, which means that some of their products tend to have a short production run, and - even if you acquire a taste for them - are no longer available after a short period of time.

For a beer that clocks in at 9%, this is deceptively light, and crisp, and well balanced, like an elegant cider, - without that heavy and leaden 'sourness' (of an unpleasant nature - as, normally, I like 'sour' beers) that one can find in some ciders.

My second of the night is another offering - another sour (a mild gooseberry sour) - from "The Wild Beer Company" that goes by the wonderful name of "Wild Goose Chase".
 
Haven't jumped on the sour beer train yet. All of my beer drinking friends have jumped on it and are going full steam ahead.

My offering for the night was a "Pliny The Elder" Imperial IPA. One of the smoothest Imperial, heck IPA's in general. If you can get your hands on this one do it! Great beer.

Enjoy your "Pliny the Elder".

Oh, that is a beer for my "bucket list"; yes, I know it is legendary, and would love to have the opportunity to taste it, as I love a really good imperial stout.

Re the sours, to be honest, in winter time, I tend to prefer rich, robust (and highly alcoholic) stores, porters, and Belgian style quadruples.

But, to my mind, the sours do work rather well when summer beckons.
 
A new sour style beer I bought today - one that was strongly recommended by the staff - from a well regarded American brewer, Crooked Stave. This is their "St.Bretta - Brettanomyces Citrus Wildbier." Very tasty.
 
A timeless and elegant classic for tonight: "The Blushing Monk" described on the label as "a Belgian style ale fermented with pure raspberries", which comes to you, (or, rather, to me) courtesy of Founder's.

This is Founder's' homage to those fruit beers (kriek and framboise) that you find in Belgium; some of the standard industrialised ones can be rather underwhelming, but the really good ones (which use only natural ingredients, as this beer from Founder's does) and are produced in small quantities, are excellent.

So far I have not been disappointed with any of the beers I have had from Founders. Excellent brewery so far. Granted I have not tried all of their beers, but man what I have tried I have been thoroughly impressed with!

There have been one or two of their beers I wasn't especially crazy about - but that was more in the nature of an experiment that I didn't care for, rather than a mistake by Founder's - for example, I wasn't entirely keen on Devil Dancer, and a beer made with chilli (I love chilli in food, but prefer to forego it in beer) was not a favourite either.

However, I have liked most of what I have consumed from that stable; and their stouts are superb.

Which ones?

I don't fault them for experimentation - not everyone likes the same things, after all - but, agreed, they have produced a few beers that I didn't care for, at all.

However, they have cracked the production of good stouts and porters. Anything that they produce as a porter or stout is something that I will most likely enjoy.
 
Another excellent beer from Crooked Stave: This one is called Hop Savant, and it describes itself as "An American Brettanomyces India Pale Ale".

Very agreeable and exceedingly tasty.
