You can get this done for free by your doctor in Europe
They will likely use a simple dye-colouration dip-stick test to give an approximate indication of any issues, with a proper blood test to follow up if there is anything interesting indicated by the dip-stick. You can buy a pack of those sticks - like 50 or so - for a few dollars / pounds and just do it yourself if you have a reason, or for peace of mind.

As Mr Goldblum's character says. Just because we can do a thing....

Yes. Is recording aspects of a user's activities on a website the user's data or the website's data?

Irrespective of whether is should or shouldn't be, realistically it's the user who has the responsibility of actively protecting the data they wish not to share, and the user should not expect any site to do so, unless that site specifically states as such about specific data (e.g. banking information on a site /online service providing a payment system).

A claim of "we will never share your data", even when true, is not saying data will not be collected.

Collecting data from user activity is essential to what a lot of the web is now built on. That's what you're buying into when using the web. Every click you make is effectively information that you are giving, as it is an interaction with a server.

I read this (and the poop reader from earlier in the month) and stop to consider how much booze I consumed durning the aughts and had a bit of a chuckle.

Those days are long past (no more booze for me, sober life is much much better) but even now with all my self imposed health challenges I don’t obsess enough over my pee and poop to buy one of these things. My doc and common sense give me enough info to to know what’s going on there.

I suppose if you were an athlete, in training for an event like a marathon or an Ironman the info these sensors collect could help you optimize your diet and training schedule.

I'm not even sure about that. It's a "wellness device" without FDA Approval, so it is "motivational", like an Apple Watch, rather than claiming to be accurate enough for "proper" medical use. Using traditional methods to monitor would still be cheaper and more accurate, and if you were an athlete, you would probably be aware and using traditional methods already.
 
While at first I was interested in this (signed up for Withings info emails on it), it looks like it's not going to do anything worth the price. Vitamin C tracking and and hydration are not something I'm concerned about (between diet and a small daily multivitamin, I'm not at all worried about Vitamin C). Ketones might sometimes be useful, but peeing on a stick is two orders of magnitude cheaper. And calcium is a separate cartridge, so I can't track that and ketones at the same time, apparently.

I was really hoping it would provide more data. Perhaps gen 2...

If the company gets taken over, that data almost certainly becomes available to the entirety of the taker-over.

Anyway, are they bound by the same non-sharing originally "promised"?
 
What trends, though? You can track ovulation hormone trends with a cheap test strip as well, and for pretty much anything else, it seems there should be no trends of note in the analysis if you are following your doctor’s advice.
So measuring things like ketones may help to identify proper kidney function or systemic issues. Also, higher calcium levels over time may reflect a diet/metabolism issue that could cause/lead to kidney stones.
